This matcha comes from a blend of tea leaves sourced from several small plot farms in Uji, Kyoto. The tea leaves are selected and stone-milled by a fourth generation tea producer. The flavor of this matcha comes from firing the tea leaves in higher heat than usual. The result: a toasty, nutty-like aroma with a clean & mellow vegetal finish devoid of bitterness. It's earthy & bright and fresher than most matcha you find in the US. Fresh matcha = less astringency & more sweetness.
